Variation of Squalene Content of Oils Obtained from Olives Harvested at Different Times from Gemlik and Kilis Yaglık Cultivars in Kilis Region

Olive (Olea europaea L.) is a significant crop especially in Mediterranean countries. In Turkey olives and olive oil have major agricultural importance Olives been used not only nutrient as flavor enhancer dishes, but also medicine because of having essential roles for human health. the pharmaceutical value uses are related to biochemical content compounds. Mainly four chemical sources: mono-unsatured fatty acids, polyphenols, carotenoids squalene functional bioactives particularly affects. The present study was designed examine changes contents gained Kilis Yağlık Gemlik cultivars’ fruits harvested tree different time along two years. Squalene oils varied according harvest time, cultivar cultivation year. Accordingly, variety affected squalen content, more than Yaglık cultivar. terms its cultivated year, high yield an increase observed. oil, decreased first then increased by fruit maturation.Therefore, effected ripening stages.
